Central Texas style barbecue is not only the centerpiece of Texas barbecue, but it is the buzz driving the culinary scene in many parts of the world today.  The simplicity and authenticity may be appealing, but the process comes with many complex variables and if mastered, delivers results that will have people lined out the door.

BBQ XO class instructors are highly regarded and prominent pitmasters/instructors of central texas style barbecue with thousands of hours of manning pits under their belt. learn the processes and gain insight into the minds of these prominent pitmasters, getting a bird's eye view of their technique, fire style, fire management, meat selection, meat preparation, the cook, and much more.

Instructors

BRENDAN LAMB

Born in Lubbock, TX, Brendan Lamb has been a steady fixture in the Central Texas BBQ scene.  He cut his teeth in one of Texas's top rated barbecue joints, working alongside some of the best in the business.  

In 2018, he ventured out on his own and headed north to Dallas, TX where he launched his Smiley's Craft Barbecue brand. He is now serving his flare of smoked craft meats as Smiley's continues to grow an impressive following. 

Brendan has also instructed and consulted with numerous barbecue start-ups who credit his one on one classes to their success.

Alex George

Alex George of Savannah, GA, transplanted to Austin, TX for an opportunity to work at Goldis Sausage Company, where he gained his first exposure to the art of Texas BBQ. Over the next few years, he moved on to sharpen his skills in the pithouses of world famous Franklin Barbecue, Smokey denmark, and valentina's Tex Mex BBQ.

 

Having studied under world renowned pitmaster Aaron Franklin and Braun Hughes, Alex began to chisel his own skill set into formation.  He is meticulous, a master of the details, and deeply understands the nuances of cooking barbecue. 

 

In March of 2019, Alex took his passion of Central Texas Style Barbecue to Indianapolis, Indiana where in just less than a year he has built the successful venture of old gold barbecue.

Might Joe Yim

“Mighty Joe Yim," is a Chicago native who first emerged on the BBQ scene with his backyard pop-ups known as Knox Ave Barbecue. Joe, who at the time was a high school teacher and coach, followed his passion to Texas where he had the opportunity to work at some of the best barbecue joints in the state and arguably the world. 

After cooking at Terry Black's, Truth Barbeque, and Leroy & Lewis, Joe has a vast amount of knowledge and experience under his belt.  

 

In the spring of 2020, Joe will debut Knox Ave BBQ back in his hometown of Chicago, bringing authentic, central texas style barbecue redefined with his own unique cooking style.
